During the first phase of the project, an academy will be set up to prepare refugees for their entry into the professional catering world. However, the learning process will not consist of spoon-feeding information but will integrate the refugees’ experiences, ideas and tastes from the outset. During the second phase, a canteen will be opened that will initially take the form of a pop-up concept in Hamburg. Here too refugees will have a say and be involved in the work from the beginning. The project refugee canteen unites environmental, social and cultural approaches which it makes economically viable. Lukas Halfmann is a professional chef while Benjamin Juergens works as a consultant in strategic brand consulting and has some experience in starting a business.
